Rain,
rain, and more rain. Not to mention the raging easterly winds. It wasn’t
exactly a great start to the day, but rain is necessary at times too. In the
morning I read for awhile and cleaned up in the kitchen. Around noon Bentley
and Jordan showed up and we all decided that since Ginger wouldn’t be back for
another day and it was so crappy out we would make rhubarb fruit leather.
Bentley and Jordan gathered the rhubarb while I checked on the greenhouses.
The
first step was cleaning and chopping it. Jordan chopped his using a food
processor and I cut using a knife. By the time we were done, we realized we had
way more rhubarb than we needed. I decided to make some rhubarb desserts with
the leftovers.
The
fruit leather is made by first simmering the rhubarb with sugar and water.
Then, the mixture is puréed to make a uniform mixture. This is then spread
thinly on a plastic disc that is placed in the dehydrator. The dehydrator
circulates warm air for a long period of time to slowly dry out the fruit
purée.

I
made rhubarb pie and muffins with the leftovers. The pie we have yet to try but
the muffins turned out great! For dinner this evening I made chicken tacos with
tons of toppings, a very delicious dinner. Hopefully tomorrow is a sunnier day.
